Ground Turkey Stuffed Bell Peppers

On my quest to lose weight and take care of myself, I am experimenting with new ways of making traditional dishes. One of these is stuffed bell peppers. I like to eat them, but I decided to change it up a bit and replace a couple of ingredients.

So, gone is the ground beef and rice. They have been replaced by ground turkey meat and cauliflower. I didn’t use butter or traditional Italian seasonings, going for a more spicy take. I hope you enjoy the recipe as much as I did.

  1. Preheat the oven to 350F
  2. Mix the Chili Powder, Cumin, and Paprika. Salt and Pepper to taste.
  3. Boil the cauliflower until soft and break it into smallish pieces.
  4. Strain the cauliflower and put to the side.
  5. Add the olive oil to a pan or skillet on medium heat
  6. Saute the Onions until translucent
  7. Add the garlic.
  8. Add the mushrooms
  9. Saute both
  10. Add the ground turkey. Cook until almost done
  11. Add the spinach
  12. Cook the spinach until wilted.
  13. Add the diced tomatoes
  14. Stir until warm
  15. In a bowl, add the cauliflower and the turkey mixture
  16. Add most of the cheese and stir
  17. Cut the tops of the bell peppers
  18. Clean out the middle of the peppers
  19. Stuff the peppers
  20. Place in the middle rack of the oven
  21. Bake for half an hour.
  22. Let cool for five minutes before serving
  23. Serves 5
